Who can resist the beautiful beet? It adds a sweetness and flavour that many of us cannot seem to resist. They’re high in fibre and Vitamin C, and are great for the kidneys, and pancreas. For these reasons and more, beets make for a great addition to a child’s diet.
My least favourite thing is the fact that it stains so easily, so please be sure to wear dark colours when preparing this dish. Don’t forget to dress you little one in dark colours also if possible. We would not want to stain those adorable outfits!
a handful of mushrooms
1.Wash beet, wrap in foil
2.Bake at 375 degrees F for 50 minutes or until you can pierce with a knife
4.Wash, peel and chop your carrots and zucchini
5.Steam them until tender
7.Wash & chop your mushrooms
8.Stir fry on medium setting
9.Combine all ingredients in blender, and blend just enough to get your desired consistency.
I stored the remaining portions in my Kiddo Feedo silicone freezer tray. They’re not just great for freezing, but they’re oven safe too! I’ll try baking something up in them next week.
