Simple Celery Juice

Are you a celery fan? Celery is loaded with vitamins A, B, C, K, niacin and folate! It’s natural sodium content helps us break down food, which is great for improving gut health (along with a healthy diet). As an adult, I noticed that drinking a glass daily has helped my skin become far smoother. When I say ‘skin’, I don’t just mean on my face, but everywhere! My arms are softer, my legs and back etc…it’s like I’m in a new body when I’ve had a glass every morning for at least three days straight! Keep in mind that this is paired with a dairy free diet, as dairy is known to cause acne, and trigger existing eczema, which my children had as babies.

So here is my go-to for celery juice. I love altering the ingredients by adding extra greens such as swiss chard, kale, spinach and more. If you’re not a fan of the taste of celery, add an extra apple or two. For those with children who do not favour the flavour, add a few apples, and with each serving, as they grow accustom to the taste, reduce the quantity of apples for a higher celery content beverage!

My blender broke a few days ago, so this recipe calls for a nut bag to separate the juice from the pulp. If you have a juicer, simply wash all ingredients and juice them. Personally, I love adding water to my juices for extra hydration. My kids and I don’t always drink enough water in a day, so adding it to juice is just another trick to get some extra hydration in.

Once this recipe is completed, you will have a bag (or juicer) full of pulp. Some people throw it away, and some use it for homemade crackers, smoothies, soups and lots more!

1/2 stock celery
2 small cucumbers
3 granny smith apples
1 cup filtered water

1. Wash and chop all ingredients
2. Blend all ingredients
3. pour into nut bag
4. squeeze to strain out the juice
5. Serve immediately

DockATot®: The Perfect Lounging Dock

I am officially four children deep into this adventure called motherhood, and what a ride it has been! The biggest difference between this child and our previous ones, is how few baby related items we purchased for her. Each new child we have receives a large number of hand-me-downs, and by the time we had reached our fourth, we only invested in a handful of items. That being said, I do browse social media from time to time to see what’s a hit in this industry, and became interested in the DockATot® Deluxe+ the second I saw it.

The DockATot® Deluxe+ is a Stage 1 docking station for little ones from the newborn stage until around eight months old. The name is pretty self explanatory, as its purpose is for docking your tot when needed. In my case (because our little one is only 2 weeks old as I type this), it’s the number one spot for baby to lounge between breastfeeding sessions, or for her to relax while her three siblings marvel at our new little blessing. As she grows over the next few months, the DockATot® Deluxe+ will grow with her, and its uses will multiply. It’s a great spot for:

•Diaper changes
•To get in some tummy time
•To put baby down if you need do something quick like answer the door

Can we discuss comfort for a second? Cribs are all well and good, but when it comes to daytime lounging, who wants to sit on a completely solid surface? The DockATot® comes with a cushion insert at the bottom, creating a flat yet soft surface for little ones to hang out. Need something to match your room or style, no problem! DockATot® offers additional covers that are sold separately. This is great because it allows you to keep a second cover as backup for big messes, or to match the style of its surroundings. As a mother of four, I cannot stress how important versatility is to me when it comes to products for infants. The more uses I can get from it, and the more ways I can use it is the better it is for me as a money conscious parent!

I had contacted DockATot® about a collaboration, because I really wanted to try their product and see what the buzz was about. So far in my experience, its popularity is well deserved. Here are a few more points I took while using my DockATot®:

Accessories and spare parts available: Do you need a travel bag for when you’re on the go, or a toy arch to attach for more fun? Visit their website for some awesome add ons.
Get spare covers if possible: If you ask for this as a baby shower gift, I recommend you request additional covers from other friends/family as a separate gift. We received a plain white cover for our and I am in love. I swap out depending on my mood, and it changes the feel of the whole room so easily.
Use the plastic case as a travel bag: The DockATot® is pretty handy to keep baby in when visiting friends and family. If you are able to get the travel bag, I highly recommend it. If not, you can do like me and use the plastic carrying case that came with it in the packaging. It probably won’t last as long as the travel case, but it has some use as a cover for sure. It comes with a handle as well.

Can infants sleep in their DockATot®? Personally I believe its purpose is primarily for lounging, and would like to stress that once baby is inside, that they should be supervised at all times, especially during the first few years of life, when they are unable to turn their heads independently. Aside from that, I am 100% satisfied with the look, convenience and comfort of the DockATot® Delux. It comes in a larger size for older kids, and I would definitely consider going up a size once girly is a little older. They are so comfortable, and our three year old can second that, as she uses it to lounge in, despite her long legs hanging from the end of it.

I am now officially a mother of four children between the ages of 1 week old and 7 years old🎉. We keep pretty busy, and staying organized is a crucial part to a smooth family outing. I had the pleasure of trying out the TWELVElittle On-The-Go Stroller Caddy in their Stripe Print, and I am excited to share my experience with you. I am very much into the monochrome colour scheme as of late, so the print alone attracted my attention. Below are some of the features about this caddy I favour the most.

My Favourite Features
Removable stroller clips: This means it can be used as a diaper bag for everyday use, or as a caddy on your stroller or around the house.
Made with water resistant materials: Because messes happen! Have you ever had a baby bottle, sippy cup or dirty diaper spring a leak in your diaper bag? Or perhaps you were out for a walk, and it began to rain or snow? Water resistant materials make for a much less stressful time.
Vegan leather trim: Looking for a diaper bag that is both fashion forward and cruelty free? This particular diaper bag from TWELVElittle is proof that you can carry an item made from cruelty free materials and still look fabulous!
Top zipper for easy access: When you’ve got your hands full, you will appreciate this feature. The model I have comes with a top zip, giving me easy access to the contents without having to open the main flap. This is perfect for when I am juggling a number of items (perhaps some food, or a child or two!).
Customize your space: Adjust the Velcro on one of the dividers inside to alter the size of your storage space! This feature is perfect for larger items like clothing or extra food. We manage to save on space by not needing bottles this time around, but with 4 children, that extra space is perfect for sippy cups and extra snacks!

When we are on the go, I try to keep a minimalistic mindset when I decide which items to bring with us. It makes it easier to stay organized, and means I have exactly what I need with me, and nothing more.

Some other fun features include the set of stroller clips and detachable long strap. Why stick to a bag that can be carried one way, when you can customize your bag to suit your mode of transportation? If you are going for a stroll, use the stroller clips. If you are headed out for a quick drive, make use of the long strap to wear as a purse. I love versatility in a product, as it’s great for parents of multiple children, and grows with your child as well. To add icing to the cake, this bag is also BPA and PVC free. That means no harsh chemicals getting in contact with your baby items. We all know how sensitive their immune systems/skin can be at this stage, .

Would I recommend this caddy to someone in search of one? If the person is searching for something convenient and practical, my answer is yes! The style and separate compartments really won me over, and after using it for a few weeks, I have no issues or complaints about it. It’s made of durable materials and I believe it’ll be with our family for a while. It is currently winter here, and I am excited for temperatures to warm up, so that I can make use of this caddy as a stroller accessory on a nice and sunny outing. I will be sure to update the photos in this review when the time comes!

Green Peas, Sweet Potato & Spinach

The fun thing about this #recipe is that you can blend the ingredients for a longer or shorter period of time for desired consistency. Here is a three ingredient recipe that is rich in dietary fiber, protein, iron, potassium and loads more. It’s plant based, and also butter free and oil free.

1/2 cooked peas*
1 large sweet potato
Handful of baby spinach

1. Preheat oven at 425º🔥.
2. Thoroughly scrub your sweet potato
3. Wrap it in foil, or place covered in an oven safe dish
4. Pick throughout it with a knife
5. Bake for 40 minutes, or until you can easily pierce through it with a knife
6. Let cool, remove the skin with your hands (slides off easily)
7. Set aside
8. Wash your spinach well in cold water
9. Steam for 2 minutes
10. Set aside
11. If your peas are frozen, cook according to directions. If they are canned, drain and rinse well
12. Blend all ingredients together
13. Serve

I froze the remaining portions in my Kiddo Feedo Freezer Tray. To defrost the frozen food, I leave them in the refrigerator overnight.

Vegan Tofu Lasagna

Vegan friendly – oil free – egg free – vegetarian friendly

This dish was completely made up on the spot, so I won’t be able to provide a recipe list with specific measurements. BUT with that said, you absolutely need to make your own, and hopefully this loose recipe is enough to help you whip up something good! This lasagna recipe contains no meat or dairy whatsoever. That being said, whether you’re vegetarian, vegan or a meat eater, if you have taste buds, you will surely find a spot in your heart for this nice and hearty dish! Who doesn’t love a good lasagna dish? I promise to remake this and note specific measurements next time! Below is the breakdown of how I put this deliciousness together.

Sauce Ingredients:
2c tomato paste
Vegan ground “beef”
2 onions (finely chopped)
1 pack mushrooms (chopped)
Beans of choice
1 stem celery (finely chopped)
3 cloves garlic (chopped)
Salt to taste
black pepper to taste
Pinch of paprika
Veggie stock
Italian Parsley (chopped)
1 zucchini (chopped)

Sauce Instructions:
1. Preheat pot on medium setting
2. Add your chopped ingredients to a large pot
3. Pour a little (about 3 tablespoons) veggie stock into the pot (as you would with oil)
4. Cover pot, and stir occasionally until the mushrooms are cooked all the way through
5. Add tomato paste, beans, garlic, salt, vegan ground beef, paprika, black pepper, and a little more veggie stock if you find the mixture too thick.
6. Cover for another 10 minutes, stirring occasionally.

Cheese Ingredients:
350g non-GMO pack hard tofu
1/4 cup Nutritional Yeast
1/2cup Tahini
Dash of salt
Dash of black pepper

Cheese Instructions:
1. Use a potato masher and mash/mix all ingredients together
2. Aim for the consistency of ricotta cheese

Pasta Ingredients:

Pasta Instructions:
1. Boil until cooked
2. Drain water and run under cold water to avoid them sticking together

Now for the Lasagna Layers!
1. Preheat oven at 350°
2. Add a little sauce to baking dish and spread it throughout to avoid the pasta from sticking to the dish.
3. Place 3 strips of noddles side by side to cover the dish
4. The next layer is sauce
5. The next layer is the “cheese”
6. The next layer is baby spinach (raw. This layer is optional)
7. Repeat these layers until you reach the top.
8. I sprinkled a little bread crumbs on the top. This too, is optional.
9. Bake for 20-30 mins

“Pretty in Pink” Raspberry & Mango Combo

The photos do not do this justice. The colour is so pretty, that I couldn’t stop staring at it! Gotta love a combo that is appealing to both the eyes and the taste buds!

Now I prepared this one with frozen fruits. You are absolutely free to use fresh. I used frozen because it’s what we had on hand (lasts longer in the freezer for a family of 6!), and also because it comes out a lot thicker which means a great frozen treat.

Also please note that this smoothie/purée combo is for the whole family!

2 cups mango chunks
1 cup raspberries
1 cup water

1. Blend and serve

*I froze the remaining portions in my Kiddo Feedo Freezer tray. Not only are they great for freezing food, but you can bake with them in the oven (460°F)! See close up shots below. I added chopped mango chunks to add colour to the dish. Be mindful of cutting them up really small to avoid choking hazards for young little ones.

Tahini Dip (Oil Free Recipe)

1 cup tahini
1/2 cup cooked chickpeas
1 tbs hemp hearts
1 1/2 cups water
2 cloves garlic
Sea salt to taste
Juice from 1 lemon
Pinch of black pepper
Pinch of sea salt
Pinch of celery seeds

Blend everything together and serve

This mixture tends to thicken once refrigerated. You may need to add a little water to thin it out before serving. I served this in my Kiddo Feedo Freezer Tray as a platter, surrounding it with delicious veggies.
